Ingredients
• 2 packages of Kell Squires Pastures Chicken Thighs (or your preferred cut)
• 1/2 tsp red pepper flakes
• 1 tsp smoked paprika
• 1 large onion, chopped
• 1-2 leeks, chopped
• 6 cloves garlic, minced
• 8 cups broth
• 6 sweet potatoes, diced
• 1 tsp Italian seasoning
• 2 cups milk
• 6 Tbsp cream cheese
• 3 Tbsp flour
• 4 Tbsp butter
• 1/2 tsp salt
• 3 cups spinach or collard greens
Instructions
- Preheat oven to 375°F. Place chicken on a baking sheet and season with salt, once oven is ready bake for 15-20 minutes internal temperature is about 140°F (the chicken will cook more in the soup)
- While chicken is baking, heat a large soup pot on medium heat, melt 2 Tbsp of butter and add the red pepper flakes, smoked paprika, onion, leeks and garlic then sauté until soft and golden.
- Next, add the broth, Italian seasoning and potatoes. Increase heat to high and bring to a boil, cook the potatoes until tender.
- While the potatoes are cooking, prepare the cream sauce by adding the milk, cream cheese, flour and salt into a blender and blend until smooth.
- Next, melt the rest of the butter in a small saucepan, add the blended cream mixture and stir until very thick.
- Around this time your chicken should be cool enough to handle, cut or pull the meat of the bone.
- Once the potatoes are tender, add the thickened cream mixture, chicken and collard greens to the soup (if you have fresh herbs like tarragon, rosemary, parsley, thyme- now is a great time to roughly chop some of those and add to the pot as well) and cook until the greens are wilted. About 30-45 minutes
- Taste, season with salt if needed.
- Remove from heat, let cool slightly, serve and enjoy!
(not feeling up to watching the stove or need something ready when you get home? These recipe could easily turn into a crockpot recipe. Simply sauté in step 2 still. Put all of the ingredients in the crockpot aside form your cream sauce. Let cook for at least 5-6 hours on low or high for 3 hours, when ready to serve, make and add your cream sauce and you’re ready to go!)
