Ingredients
- 1-2 lbs of chicken livers
- 6-8 eggs
- 2 cups flour of choice, we prefer gluten free
- 1 cup grassfed beef tallow
- Salt to taste after cooking
Directions
- In a medium bowl scramble your eggs, set aside shells to feed to your chickens or put in compost pile
- Get a plate or shallow pan and pour flour there
- Begin heating your cast iron and add tallow
- While the cast iron and tallow are heating up begin battering your chicken livers
- Place liver in egg wash, then flour, it is up to you if you would like to do this twice for an extra crunch
- Once tallow has heated up, add your livers cook each side for about 3 minutes or until golden brown
- Place on paper towel to soak up excess oil and serve immediately
- Enjoy with a sprinkle of salt or your favorite dipping sauce!
