Ingredients

  • 1-2 lbs of chicken livers
  • 6-8 eggs
  • 2 cups flour of choice, we prefer gluten free
  • 1 cup grassfed beef tallow
  • Salt to taste after cooking

Directions

  1. In a medium bowl scramble your eggs, set aside shells to feed to your chickens or put in compost pile
  2. Get a plate or shallow pan and pour flour there
  3. Begin heating your cast iron and add tallow
  4. While the cast iron and tallow are heating up begin battering your chicken livers
  5. Place liver in egg wash, then flour, it is up to you if you would like to do this twice for an extra crunch
  6. Once tallow has heated up, add your livers cook each side for about 3 minutes or until golden brown
  7. Place on paper towel to soak up excess oil and serve immediately
  8. Enjoy with a sprinkle of salt or your favorite dipping sauce!
