Lemon & Garlic Buttered Chicken Bites

This dish is all about bright flavors and tender textures. By cutting our pasture-raised chicken breast into "bites," you ensure every piece is locked in with a savory lemon-garlic butter sauce. It's a low-carb, high-protein meal that feels like a gourmet treat but comes together in under half an hour.

Ingredients

  • 4 Kell Squires Pastures Chicken Breasts, cubed
  • 2 bunches of asparagus, washed and trimmed
  • 1/2 cup butter, melted
  • 1/4 cup Chicken Bone Broth (ideally Kell Squires!)
  • Juice of 1/2 lemon (plus slices for garnish)
  • 2 tsp minced garlic
  • 1 tbsp minced parsley
  • Seasonings (to taste): Salt, pepper, Italian seasoning, red pepper flakes, smoked paprika, and onion powder

Directions

  • Preheat your oven to 400°F and slice your chicken into bite-sized chunks.
  • Season the chicken with salt, pepper, Italian seasoning, chili flakes, paprika, and onion powder; let marinate while you prep the rest.
  • Prep the asparagus by trimming the ends, then spread them onto one side of a baking sheet and season with salt and pepper.
  • Whisk the sauce together in a small bowl using the melted butter, garlic, bone broth, and lemon juice.
  • Assemble the pan by placing the chicken bites next to the asparagus and drizzling everything generously with the lemon butter sauce.
  • Bake for 20–25 minutes until the chicken is cooked through and the asparagus is tender.
  • Garnish and serve with fresh parsley, extra chili flakes, and lemon slices.
